My secret ingredients - for my cooking friends

My secret ingredients Garlic oil: approx. 30 garlic cloves, Peel and chop very small. Heat some sunflower or soya oil in a frying pan and add chopped garlic quickly fry until light brown.

Put them in a glass or cup with lid.
Then with cold oil, the same which you used for frying, fill the container. After 1 hour you can use it super.
You can fill up the cup with the roasted garlic with oil more often. We ourselves use also the roasted garlic to refine Thai dishes.

Re: Pineapple Puff Pastry

Yummie. I would however pick out all the pineapple and stuff it with chocolate pudding. But that's just me.:indecisiveness:

Re: My secret ingredients - for my cooking friends

I have some garlic infused olive oil that I really enjoy cooking with. I also use a lot of grape seed oil. It has a very high smoke point and a very lite taste.

You can also just soak the garlic pods in oil, though thorough infusion of flavour take a week or so, but the taste is a bit more refined compared to fried garlic.

I use the same principle to flavour Vodkas. As bottles sold in India have a restricter to prevent adulteration, I just pour the Vodka to a decanter and then add fruit
- Pomegranate seeds for that vivid Violet colour and superb flavout
- Orange peel for orange flavour
- Berries - Blue berry, raspberry or black currant, for their respective flavour.

How much to add depends on how intense you would like the taste to be. For mild flavout around 50g/L, for really intense fruit juice effect around 150-200g/L

If you run out of garlic infused oil, just add whole garlic with skin to the oil and keep it at low heat and then after 3-5 minutes take it out. The oil is now garlic flavoured.

Re: Marble Cake

lol, it will be fun

First I thought I will do some VDO's. But I have a lot of things to to with my cooking, an din the kitchen I don't have an Air-Conditioner, so it is just to hot. I am happy if the food and the photos turn out in the way I want.
