Now for supper tonight.

[h=2]Hash Brown Pie[/h]
[h=4]Ingredients[/h]
  • 4 or 5 - Medium Potatoes diced to 1/2 inch cubes or Ore-Ida Southern Style Hash Browns (Enough to fill pan to 1 1/2 inches deep)
  • 6 - 8 Slices of bacon
  • 2 cups - Fiesta Cheese or favorite shredded cheese blend
  • 6 - Large eggs (enough to barely cover the cooked potatoes)

Cooking directions

  1. Deep fry diced potatoes to golden brown
  2. Cook bacon (crispy) and then crumple them into bite size pieces
  3. Place potatoes in microwave safe pan (this recipe uses a 10 inch glass deep fry pan)
  4. Cover cooked potatoes with scrambled raw egg mixture. Lightly press down potatoes to level so egg mixture just barely covers potatoes)
  5. Spread bacon and then cheese on top.
  6. Cook in microwave until eggs are done and cheese is melted. Cut and serve while hot. If not cooked thoroughly in center by microwave, finish cooking on stove top.

[h=2]Don’s Fiesta Chicken Rotini[/h]
Serves 4 to 6 people


Ingredients:



  • 2 cups dry measure - Ronzoni Smart Taste Rotini (cooked)
  • 1 can -Green Giant Southwestern Style Corn, 11 oz
  • 1 1/2 cups - Pace Chunky Salsa (Your choice: Hot, Medium or mild)
  • 1 -Bell pepper
  • 4 - Baby portabella mushrooms
  • 1 lb -Leftover broiled chicken or turkey. (or substitute “Refrigerated Fully Cooked Oven Roasted Diced Chicken Breast” from the meat section at the grocery store.
  • Shredded Fiesta cheese to taste

Directions:


  1. Precook bell pepper by cutting top off and placing in a pot of water deep enough to cover pepper. Cook for about 10 minutes in slightly boiling water. Then cut into small pieces.
  2. Cook Rotini according to directions on box. Adjust amount according to how many you are cooking for.
  3. Stir fry peppers, mushrooms until tender.
  4. Add chicken and Southwestern Style Corn to stir fry.
  5. Cook while stirring long enough to mix all ingredients thoroughly.
  6. Add cooked Rotini
  7. Add enough Salsa to just coat the Rotini
  8. Spread Fiesta cheese (to taste) on top and stir in to slightly melt and serve.

I like all of the ingredients in your Fiesta Chicken Rotini, especially the portabella mushrooms. This sounds sooo yummy! And with the salsa, corn and peppers, it will be colorful too. Most of the ingredients are in the pantry already... AWESOME!! Your family is lucky to have such a great chef. Thanks sooooooo much for sharing these with me :)
