My cake recipe

Ingredients

  • Vegetable oil spray, for misting the pan
  • Flour, for dusting the pan
  • 1 package (18.25 ounces) plain chocolate cake mix
  • 1 package (3.9 ounces) chocolate instant pudding mix
  • 4 large eggs
  • 1 cup plain or vanilla yogurt
  • 1/3 cup water
  • 1/2 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (9 ounces) semisweet chocolate chips
Directions



  1. Place a rack in the center of the oven and preheat the oven to 350F.
  2. Lightly mist 2 - 9 inch cakes pans with vegetable oil spray, dust it with flour. Shake out the excess flour and set the pan aside.
  3. Place the cake mix, pudding mix, eggs, sour cream or yogurt, oil, water and vanilla in a large mixing bowl.
  4. Beat with an electric mixer on low speed until the ingredients are incorporated, 30 seconds. Stop the machine and scrape down the side of the bowl with a rubber spatula. Increase the mixer speed to medium beat the batter for 1 ½ minutes longer, scraping down the sides of the bowl again if needed. The batter should look smooth and thick.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared cake pans, smoothing the top with the rubber spatula and place the pans in the oven.
  7. Bake the cake until the top springs back when lightly pressed a finger, us times on cake mix box for pan used..
  8. Let the cake cool for 15 to 20 minutes. Trim top of cake to level. Let the cake cool completely for 25 to 30 minutes before icing.

Peanut Butter Frosting


Ingredients

  • 2 T. soft butter
  • 1/2 c. peanut butter creamy
  • 3 c. sifted powdered sugar
  • 1 tsp. vanilla
  • 1/4-1/3 c. milk or light cream

In small bowl combine ingredients at medium speed on mixer or wooden
spoon. Beat until creamy & spreadable. Add a bit more milk if too
thick.

Serve small pieces because this is VERY rich.
