I thought they all have auto voltage.

They are supposed to be, but i've seen some International customers complaining about this..
The Indian website does not say much

Atm they seem to be the only distributor in India.

Has anyone heard of Polinchrom??
ELinchrom products sold in India are (or were) apparently sold under this name

Supporting the workers in your own country always seems a good plan.

But to market the lights internationally, they simply must have 240 volt options which B&H in USA might not stock.
You do not want to deal with 120 volt units.

My concern about the 500 watt second unit is 1) that's a lot indoors, and 2) those specific models only turn down to 1/16 power (check specs).

I use a 160 watt second Alienbees B400 main light, in a large 40 inch double baffled softbox, within 3 feet of subject or less, turned down to about 1/16 power (which meters f/8), and with fill light, I shoot at ISO 100 f/10.
1/16 of 160 is 10 watt seconds. But 1/16 of 500 watt seconds is 31 watt seconds.

The next step down is 250WS, but the difference in price is only about $100 for a kit!

And i don't think any of the Elinchroms am looking at would support high speed photography.. like water droplets & spinning wheels and the such

No, studio flash are not speedlights. The spec durations you posted say t.5, which is half power points. t.1 (down to 10%) will be 3 times longer.

Einstein could be said to be, but even its action mode (speedlight mode) spec only goes to 1/13500 second. It is big, and big is slow. Your SB-700 spec goes to 1/40,000 second (page H-17). But the Einstein is a huge unit, up to 640 watt seconds. SB-700 might be 50 watt seconds (guessing, but well less than 75).

One wins in contest bragging to friends, "look how big mine is". :)

The other would be more usable in the studio to take pictures.

A pro photographer, possibly with the assignment to go take pictures of someones factory, will have several lights of differing capability.
