I have an 18-105mm

If I had money to burn i would also have a D750 ...

Sorry, I missed the 18-105...then I think the only thing you're missing is the 11-16mm Tokina. If you do get one, don't be disappointed if your shots don't come out as expected right of way. It takes a little while to get used to shooting super wide.
I just got the 14mm Rokinon, which on the FX cam has a wider FOV then the 11mm on the DX and I'm having to get used to it all over again.

WE fly into LasVegas and drive to Zion first for a couple of days. Then on to Moab and while there we visit Arches, Dead Horse, Canyonlands and then we leave there and drive to the Grand Canyon where we have a private tour starting early morning and go till after sunset. Just the guide and Gloria and I. Then the next day we are on our own shooting in the area. Then back to LasVegas and then fly home.

We re also looking forward to possibly getting together with the Lady and Gentleman Moab and friend from that area while we are here and getting to shoot with them in Moab. I think I may get a few shots off in the 16 days we are gone

That sounds great!! Now, when you say "WE", does that mean you're taking me with you?:D

No one is mentioning this, so I'm going to recommend Sigma 50-150 f/2.8. On a DX camera, it corresponds to the classic 70-200 f/2.8 lens. Image quality is fantastic, you can use it for portrait and street photography. It is a rare lens, out of production already, you can probably get a new one if you look around, or just find a good second-hand.

My personal DX "trinity" are (and these are lenses I actually use):

Tokina 11-16 f/2.8
Sigma 17-50 f/2.8
Sigma 50-150 f/2.8

They cover a whooping 11-150 mm at constant f/2.8. All three excellent image quality.

That's an impressive trinity of f2.8s Marek.

Thanks for the suggestion the Sigma 50-150 is now on my watch list - in case I see a second hand one for a good price.

Going to go and check out flickr to see some images.

Shootraw was using one of the newer ones on a D7100 a while back and producing some great work with it, portraits and such. I think there was a dedicated thread for this lens.
I have been looking out for a good 2nd hand one as well, but I am hesitant because I might go FX one day, and in that case would be better off buying a Tamron 70-200 .

Horoscope Fish had one in his old DX days. He recommended it to me. I don't regret following his recommendation.
I had forgotten the Sigma 50-150mm... And what an awesome lens it is!

As mentioned there are two versions of this lens, one with Sigma's OS and one without. The one with OS is the better version of the two, by far, and will command the higher price: This is the lens to which I refer. DxO Mark rates this as one of THE best zooms for the D7100. Definitely worthy of your consideration. I can only assume the slightly off-beat focal length turned many away from this lens, which is a shame. It's a superlative shooter.

Brad - I was worried about that as there always seems to be a few models of each. The one I have found is a Sigma APO 50-150mm EX DC HSM

Is this the better or inferior one?

As for the macro, from most reports and reviews the Tamron 90mm is a very nice lens. With the 7100 you get the crop factor and at that length folks seem to like it for portraiture too. Maybe get the Raynox kit (150/250) instead of a different lens. I have both Raynox and find the 250 a bit limiting. It causes you to bump the subject, plow dirt and block your flash, but do like it when it hits just right.

Get the Tamron 70-200mm f2.8 brand new off eBay for $800 USD from seller ID suishin...mine just came last week. Direct from Japan, free shipping in under 5 days. Brand new in box and comes with a great carry case with both caps and the hood. Can't go wrong...I love mine.
I'd also add the Tamron 24-70mm f2.8 to your list also from eBay for around $900 USD...different sellers, but possibly suishin has it as well.
Just be sure to get your focus calibrated at your local camera shop even though it's brand new...mine was way out, but tack sharp now.

I've been thinking about it and come to the conclusion that when shooting with the 18-105 I often shoot at about 35mm and find the 105mm just not quite enough. I have a 35mm prime and think that the 150mm on a DX body would be so much better form me.

Oh well - patience my boy!
