D7500 shoots even when not in focus

Well that's your problem. You need to turn OFF the focus when you 1/2 press the shutter button. There's a menu setting to do that... I don't have a D7500 and and too busy to research it, but there's a setting to turn off the 1/2 press focus on the shutter button... It's AF-6 AF Activation

D7500 shoots even when not in focus

Menu options A1, and A2 control whether the shutter "Releases" or "only releases when there is a "Focus" lock. Check those two settings. If it's set to "focus" and it's not got a "focus lock"...then the camera's menu structure may be hosed. Start by doing a camera reset and starting over... A...

    d3300 with ES-2

The Es-2 is a type of extension tube, in and of itself... You do need a macro lens... the old 60mm D lens is perfect and readily available on eBay for cheap... You do a gross focus with the ES-2, and then a fine focus with the lens... As for light, with some fiddling to get the exposure...

    Slide copying/digitizing with D3300

I've not used a D3300 for that, but have used other camera bodies to do it. It's not a function of the body as much as it is the lens. You're basically taking a macro shot of the slide at your camera's resolution... lens and software to edit the results are the important factors, not the body.
