It sounds like you're starting from scratch at figuring this out and don't want to miss the opportunity to catch this. I would suggest switching the camera to shutter priority and then find the closest place you can to the highway. Set the focus to AF-C (continuous focus adjustments). White balance to whatever the lighting is for that day. Now practice tracking cars on the highway moving fast (if you can try to approximate the track setting: distance, straight-away, etc...) and snap pictures at varying shutter speeds. When you find the right shutter speed you can freeze the car but the wheels will show the blur of movement. Take the shutter speed up higher and you can freeze the car and wheels. Practice, practice, practice! It takes practice to follow action and keep it framed properly.
Two more suggestions. When you are tracking the cars and snap the shutter you must continue to follow and track the car - follow through. If you don't your abrupt stop will not give you the photo you're after. If there are others driving that day use them as the test guinea pigs to dial in your settings.
