Happy Thanksgiving Everyone
20 Pound Turkey
16 hour soak in brine made of:
Chicken stock, Kosher Salt, All Spice Berries, Peppercorn, Candied Ginger, and Brown Sugar.
After the 16 hour soak stuffed with: (Aromatics)
Rosemary, Sage, Onion, Apple, and Cinnamon Stick.
Into the oven for 5 hours
You give up stuffing "in the bird" for the trade off of the flavor the Aromatics give the Turkey from the inside out.
This is the seventh year Chris has made it this way and this is the only information she will allow me to give out. There are other steps you have to do in each process that I can not devulge.
It may not look like much but it melts in your mouth.
