Lobster Twice Baked Potatoes

Since the pork loin got so many likes here's a side dish I made last year haven't this year YET

step 1 microwave potatoes till done use big taters



Step 2 boil Lobster tails till done



Step 3 scoop out potato from skin leaving 1/4" still in the skin

Step 4 mix potato with salsa sauce mayo and lobster and spoon back in potato skin




Step 5 add a heaping of OLD CHEDDAR and Tex Mex Cheese on top of each potato



Step 6 Bake potatoes at 350 degrees for 1/2 hour

I had something like this, without the salsa, in Maine before. It was very good. I'll need to try this. Looks tasty!

Look at the last pic barley hit the counter and one already gone
