I shot 62 weddings and I individually edit every image.

Why do you shoot everything at f/8???????

For the OP. consider this ....just shot 40 weddings this year all with D7100/810 all jpeg basic sharp +9 f8 auto iso ...
Never had a problem or complaint . Why mess about just get on with it ....you cannot process 1500 RAW pics individually from a wedding you have to baulk convert so why not let the software in the camera do it ...
 
maddest I ever did was 6 weddings in 8 days staying at hotels as I travel......yes F8 ( f5.6 in the winter) cannot change anything as the dials are taped up ...each pic individually adjusted but with perfectly clear /lightroom and photoshop if required. RAW forget it

As long as the light is there, F8 gives excellent DOF, so a slight focusing error is not of much consequence. I prefer the other extreme - shoot at F1.8 most of the time just to isolate the subject and blur the background, unless I want a better DOF for groups and action scenes.
 
you are quite right Aroy BUT uk punters expect mobile phone like images with everything in focus though of course better quality.
if there is not enough light then there are two options ..a flash or a D810.
I don't do focus errors ,my fine focus adjust is spot on.

I shoot as open as I can for every shot, except the formal group shots.

Mainly at f1.4, f2 or f2.8. f8 here is reserved for wedding togs who can't afford decent equipment or who can't use it.
