RAW simply gives you more exposure latitude, that even the best JPEG cannot match, till such time as a 12/14/16 bit JPEG standard is adopted. So for simple snapshots in decent light JPEG will be sufficient, even for applications like outdoor sports and reportage, where the fast turnaround of the images from camera to client are more important than properly exposed and framed image. But for the rest RAW will be preferred path.

Regarding Software, I use Nikon Capture NX-D, and as long as Nikon makes bodies with RAW capability, it will supply the RAW processing software. For compatibility with a lot of image processing software you can always export to tiff16 format, which is mainly demosaiced RAW image file.

If you want JPEG urgently you can either shoot RAW+JPG and send JPEG from camera, or if you have some time, just batch convert RAW to JPEG in Nikon supplied software (doing away with saving JPEG).
