So, it was around 68F yesterday. And now today, it has rained all morning and now it is snowing!! How dare it! I mean really?!

In case anyone was wondering, those are chocolate covered gummi bears. Unfortunately no survivors were found. Their loss will never be forgotten. Until I buy more that is.......

With everyone showing off recipes lately, I figured I would play along!

Doug's Down and Dirty Rice Balls.

3 Cups Medium White Rice.

2 3/4 Cups Water.

1 Roasted Chicken Breast Thinly Sliced.

Sour Cream

Shredded Cheese (I use Sharp Cheddar)

Salt and Pepper to taste.

Things not needed but make life easier. Plastic wrap!
How I do this is cook the rice in the rice cooker. Then I let the rice cooker switch to warm for at least 15 minutes when done. This way all the water is absorbed into the rice.

Lay down a descent size square of plastic wrap. (less mess)
I then use a wet plastic spoon to scoop out some rice.
I then make a Rice Patty like so....

I then placed a couple pieces of the roast chicken. (you can cheat and use the store roasted chickens). A bit of Sour Cream, and then a very small touch of cheese. Salt and pepper to taste.

Next step is to create a Bowl using your hand.

Ah...and now you see the genius of plastic wrap!

Moving on. Gently fold the sides of the bowl up and over the fillings. Then just twist the plastic wrap together

Now all that is needed is to untwist the plastic wrap and enjoy! I usually eat mine cold the next day for lunch. I realize these are not the traditional fillings typically found in a rice ball. But this is still a fan favorite creation of mine. I usually just sprinkle with more salt and pepper and enjoy!

Ah....and about that plastic wrap. I use this method so I don't have to use salted water and my hands. I find this cleaner, and uses less dishes to make. And forming the ball is super easy and quick.

I am thinking of saving for either the Sigma or new Tamron.

I know the 70-300 is a cheaper alternative....but go big or go home right?
