If you're using a tripod you can set a self timer of 2, 5, 10 or 20 seconds and it will automatically take the 3 bracketed exposures.
In burst mode, it stops after 3 exposures even if the shutter release is still held down.
If you get an infra red remote, it only takes one picture per press.
The 2 second self timer works best but the camera goes back to single or burst mode after the 3 exposures so you need to set a self timer again.
The D5100 can be used for auto bracketing and HDR but not sure I'd buy it if HDR was high on my list. Fine for occasional HDR.
Sorry, I don't know which cameras are better but I'd look further before settling for a "half way there" camera.
