Aperture settings

Hopefully I'm not too much of a Newby by asking this question, but here goes; I have had my D7000 for about 3 years now and I'm just starting to go away from the "all auto" mode. I'm trying to run nearly all the time in the Aperture priority mode but I'm having trouble trying to adjust for depth of field. If I'm shooting at ISO 100, the depth of field in blurry like I want it. My problem comes when I have to get farther from the subject and still want to blur the background. How do I change the aperture settings to accommodate something like this?

If you want a blurry background have your aperture wide f2.8/3.5.
It will help if there is a large space between the background and the subject

Depth of field for a given lens increases as the subject gets further away from the camera. If you are needing to get further away from the subject, you'll need a longer focal length for all else equal (same exposure settings) to keep/get that blurred background.

I appreciate your answer but, how do I get to those different aperture settings. There are no settings on the lens like in the old days.

On the D7000 in Aperture priority mode, the command wheel near your thumb should change aperture settings. The lens itself still have a maximum aperture, so it's possibly that you've reached the setting where you can't open it any further, but the setting is made from that command wheel. The same command wheel changes shutter speed in shutter priority mode.
