Best I can tell, you should not be able to produce a B&W photo in Guide Mode.
Guide Mode essentially steps thru the choices that are available in the various scene modes, but the monochrome (B&W) option should only be available in P, S, A and M modes. In those modes it is changed in the Shooting Menu under Picture Control.

Sounds right, but Monochrome is also an option in the Retouch menu, to be shown on the rear LCD. Says it just makes copies, so there should be color image too, but turn it off if it is on.
