You could always tell them "A great photographer can make an outstanding image with a pinhole camera"

I just say that the Right gear certainly helps. Thanks. ( since I, and you know too , that someone can take a crappy pic with the best of gear,so if the person liked what you ended up with, then its still a compliment )

My wife and I own a bar. I've done the photography for all my businesses and the bar is event photography at it's wackiest! We have a wall of shame, where the pics are displayed and they go on Facebook. I have to bite my lip every time a patron tells me that my camera takes great pictures and just say "Thanks". My drunks are just trying to be complimentary in their own moronic way.

I had someone compliment me on a frame once; that's about it. But I'll remember it, just in case

I got the old "Wow, that's a really good picture... You did that?" just tonight. I told him "No, the camera was just setting on the table and it took that photo all by itself!" very sarcastically!

One of these days, I'll be in your area; and when I am, Jim, I'm dropping by your bar! Of course, I'll need directions...Or the name of your bar.

When out birding with my largest lens i often get the comment from passers by 'wow that's a big camera', to which i reply 'yeah, but the lens is even bigger'.

I have been fed that line way more than I'd care to admit. I will show someone a shot and they will say "Wow! I need to get me a camera like yours".....Then I have conversations like the one below:
