Well there are probably as many answers to that question as there are photographers, but generally speaking my go-to is Photoshop's Curves Adjustment Tool and, more specifically, applying Curves in individual color channels. I can't really say I have one favorite, but photographing Burrowing Owls was probably the most fun I had last year.

I haven't done as much photography in 2019 as I would like, as it's been a really tough year (6.4 and 7.1 earthquakes here in Ridgecrest, CA), but this is my favorite one.
