When I do, it depends on the subject as to whether I stitch verticals or horizontals. I will sometimes crop  a single image to an aspect ratio that resembles a panorama, when I feel the subject demands that type of crop. This image comes to mind. I shot a single image of a murmuration of Avocets. I liked the full image, but found that this crop worked much better for me.
