Outdoor picture can't see my screen or viewfinder

Not sure what camera you have, but I can relate to having a hard time seeing the LCD screen in bright sunlight. I use my body/hand/hat or whatever for shade and as far as exposure determination I can usually see the Histogram for a fairly good indication.

This. The only thing you're left trying to figure out is whether or not you've nailed the focus, but you can usually get enough of that using a hat to shade it. I you're carrying a tripod and can't turn to shadow the back with your body I would say that if you've carried the tripod then also carry a dark towel/rag/t-shirt that you can throw over the back view camera style.
