For general shooting and sports what should the image area in the camera be set to, some of the photos will be printed 7x5 ins,

Either will work. What you need to pay attention to is to not use the viewfinder to crop too much out of the image out that you cannot format the file into the 5x7 aspect ratio.

If you have a 24MP sensor, then I would not bother much. I would use the central 2/3 of the sensor for the main subject. That leaves plenty of margin. A 7x5 at 300 DPI is 2100x1500 pixels. A 24MP is 6000x4000, a 12MP sensor will be 4000x3000 pixels. So you have plenty of margin for cropping later.

What is more pertinent is to shoot in RAW. Then even if a shot is slightly dark or slightly blown, you can recover. You can also tweak the image for better presentation, a task difficult (though possible with effort) to carry out if you shoot jpeg.
