I know where I am going and what I plan to shoot or at least what I want to shoot. I go through the gear before I leave the house and check if I have a charged battery and what lenses I plan to carry. Then I go. Before I get out of the car I look at the camera. I check ISO, Mode, and just in general I set the camera for what I think will be what I need to shoot the photos at that location.
