The D500 is no longer being offered with an included grip. I never understand how Nikon lists its price at $449 (with outlets such as B&H selling it for $369); never seemed remotely worth that kind of money, but I was happy to pull the trigger and get my D500 about a month ago with the grip included. I suppose I would be a reason why Nikon does it...offer the grip, and people will buy; otherwise I would have continued to wait, I really like having the grip (used one on my D90 since day one).
They will likely offer the package again for those still on the hunt. Meanwhile at very well received recommendations, saving to go for a good 70-200mm f/2.8; in the meantime using a 70-300mm VR, which is still nice (very light weight, good for hikes I would think).
A couple of weeks ago a hummer was outside my glass door on the feeder. This was a chance shot, manually focused through the glass with that 70-300....yeah,cut off the tail a bit, but it's hard to get them to sit still sometimes!
