Apparently Nikons definition is that the interval is from beginning of one shot to the beginning of the next, when I was interpreting it as the time between photos... The example given is if you want a 2 second delay between 15 second exposures, you need to set the interval to be 15+2=17 seconds... With this in mind I have changed my settings to 36 second interval, on a 30 second exposure, this should give ample time (6 seconds) between shots for the camera to write to the card....
