I wish I could set up save buttons.

So if im taking hockey photos I have my settings saved under setting 1.

If i am taking basketball photos I can use saved setting under setting two.

Nighttime photos use setting 3. etc

Is there any way to save manual settings in the 5100?

Does any camera do that?
 
There are Scene buttons that are set up for those different things but that is not what you are talking about though. There may be a way to adjust these to suit you though. I have never used them or played with them either..

There were some little tweaks available in one of the menus, but I don't quite recall where they were. Pretty sure they were for smaller adjustments aimed at jpgs than aperture settings.

What can I tell ya- should've gotten yourself a d7000 or better.

You can't save profiles for different types of scenes on the D5100 unfortunately.
My workaround is to have the most common individual settings that I change, stored the user menu for easy finding.

What about Manage Picture Control ?
Well Picture Control *will* let you save customized settings related to color, sharpness, etc. (I call them "image styles" personally) but I was thinking the OP is more interested in saving settings related to aperture, shutter speed, and so forth. At least that's how I interpreted it...

Agreed. I think what the OP is looking for is something along the lines of the U1 & U2 modes on the D7000 and D7100. I know some of the higher end Nikons have similar functions but I don't know what they're labeled.

Ken Rockwell explains how the U1/2 modes work:

The U1 and U2 modes are easy to set in MENU > SETUP > Save user settings > (select U1 or U2) > Save settings, and the camera's settings are burnt into that spot on the dial.

My white balance and trims, exposure compensations, exposure modes, AUTO ISO minimum speed settings, flash modes and everything else I want in each setting follow along, and instantly recall as I set either on the dial. This is even better than Canon, whose C1, C2 and C3 settings remember everything, but Canon's Auto ISO can't be programmed to higher speeds to optimize it for action as I do on my Nikons.

Better than Canon's C1, C2 and C3 positions on their mode dials, Nikon's U1 and U2 settings save whatever tweaks you make to them, even if you turn off the power, and then reset to your personally preset defaults any time you switch to a different setting and return! Yay! This way if I have to tweak a white balance it stays that way for the duration, and next time I select U1 or U2, I'm back to my personal defaults. I love it!

If you want to make a permanent change to either of these settings, simply make the changes while in the U1 or U2 position, and then MENU > SETUP > Save user settings > (select U1 or U2) and you're done.​
