I am about to come into enough money to buy myself a Nikon Z7.
What do you guys think of it, and is it the best buy in today's mirrorless selection.
Keep safe, keep well

I think you will find the Z7 an excellent choice. I have the Z6 and I will tell you that I love it. The View Finder is wonderful because it is a WYSIWYG image. The clarity is quite impressive. The IBS is also very helpful.
I chose the Z6 over the Z7 because I was looking for the best possible low light performance because a lot of what I shoot is low light at my Church. The Z6 just gives you a bit more and I was comfortable with the 24.5 MP. A budy of mine has a Z7. In fact the Z7 that he has turned me from the 850 I was saving for. I could not be happier with my choice.
One other point that has impressed me is the continuous improvement. Nikon has had several firmware updates to address issues that the users have had with the product. That included this last upgrade 3.0 that helped with Eye Focus and tracking.
The other point I will want to mention is the glass. The primes are amazing. I have the 50, and 85 f1.8 and I also got the 24-70 f4. The clarity surprised me. I also use my 14-24 f2.8 F Mount and my Tamron 70-200 f2.8 G2, and I am very pleased with the focus speed and accuracy.
If you are interested in more info on the Z bodies there are three guys that use them professionally that I watch on YouTube. A Quick Edit... You will probably like Hudson Henry. A lot of his focus is on your kind of photography.

They shoot straight, and they actually invested the time in learning the camera because there are subtle differences in the focus system that a DSLR.
Last point. You will need a card reader to update firmware. That is the only pain in my mind I would go with CFExpress cards and their reader now because they are faster than XQD cards.
