Best Nikon Equipment for Product Photography in my situation?

for budget/quality -> Nikon D7000 or a bit more 7100

I like the idea of using 60mm macro would cover macros and more broader shots..

Excellent boxes. The quick solution is more diffusion on the softboxes with correspondingly slower shutter speeds to eliminate reflection. If that's not available try moving the boxes away from the product/turning off individual lamps (same for each box) until you still have enough light to shoot at 100 iso, f8, start at 1/60s shutter speed and keep going down until you get what you want. You can brighten in post.

Be patient. You won't get what you want without trial and error. Sometimes an infuriating amount of it. When you understand lighting and have your setup tuned, then think about new equipment. In product photography for high quality reproduction image quality and resolution requirements will dictate your equipment needs.
