800 Menu system seems odd?

It's a £3000 camera once the grips been added, and I'm trying to ascertain if it's working properly - that's all. The bottom line is this. A lot of the menu items don't show what has been chosen in the sub menu (as in the D700 - and as far as I can remember my D7000 too).
