Welcome to Nikonites rosecityrn! The screen staying on longer can be adjusted in the Setup Menu as follows:
1. Press the Menu Button and navigate to the Setup Menu tab.
2. Select the Auto off timers and press OK.
3. Highlight you choice of timer settings (my preference is Custom 30 sec). Select custom and then select each timer you wish to shorten or extend time press OK for each change. Click on DONE when finished.
Right after I got my D3100 as a gift I bought the book "Nikon D3100 From Snapshots to Great Shots" by Jeff Revell. I too am new to DSLR and wanted to know more about photography in general. The writer gives a chance at the end of each chapter to practice what you've learned in doing so builds your knowledge gradually to the next level. I love they way he writes and shows examples so you can navigate the menus with ease. Hope this helps.

I am also having the exact same issue but I am needing to get into my Image Quality to change from JPEG to RAW but it is greyed out. What do I need to do?

I spent 15 minutes with my D3100 attempting to recreate the issue.
I failed.
In my defense I've been shooting it in manual since I bought it six years ago.Nikon:

Get it off the GREEN AUTO setting. Try Program since it gives you basically the same functionality but allows a few more options. You can set the ISO and the flash is not popping up unless you want it to
