was looking for a selective color thread and found this, cracking capture.

some Nikon models will allow you to do selective color right in camera. both my cameras have it. in a way it's the best way to do it since you can select specific colors but the result ends up in a jpg.
i use Photoshop for what i think is a pretty simple technique. first load a color image, go to Select / Color Range where you can use an eye dropper to select the target color, invert the selection then apply a B&W adjustment. there may be fancier things you can do involving multiple layers, etc but this works for me.
this is more like selective object than color but same idea and similar method.
