I just bought a D5100 with the 18-55mm lens and I also got a 70-300mm. I'm planning on shooting wildlife and landscapes. Going through the manual I see I have a lot to learn. So here is my first question. When I turn the camera on it is the AF-A mode and I can set my focus area ( single point). After I take a single shot the camera reverts to AF-S mode and I have to turn it off and back on the get back to AF-A mode. What is the easy way?

Welcome bump...You will find that in your manual...I usually have my D300 in auto focus mode AF-C, great for shooting things that are moving..

You are right, I finally found that AF-A mode is not available in live view. Thanks

I do not typically use 'Live View".. as you found out, some features/modes may not be available
In addition to focus issues,
It is slower for me to composae
slower to take the shot itself
eats batteries faster...

I prefer to be "in" the viewfinder.. (note that I have used it for over the head or low angle shots)
