Settings for Aerial Photography

I own a Nikon D3100 camera and am going to be taking photos from a helicopter this weekend in the daytime (sunshine). I am a novice photographer and not great with all of the functions of the Nikon. Can you tell me what settings and buttons to have on / off for my camera? I will be taking pictures of buildings and land from ~700 to 1200 feet while moving.

Fast shutter speed, hand hold your camera - don't prop your cam up against the helicopter, large aperture. Don't use a lens hood, the wind will get caught in it - try keep your lens inside. Please tell us what lens you will use, then we can help you out with shutter speeds and so on. Lastly, DON'T drop anything out the window!!
