I have been using D600 and recently picked up D750. In D600, if I keep AF-On, I can focus, let go of the AE-L/AF-L button, recompose and then take a shot. However, in D750 I am unable to do so. If I have to recompose, I have to hold the AE-L/AF-L button; otherwise, pressing the shutter button doesn't release the shutter. Is this a problem with my D750 or is this the way the camera is supposed to work? Also, is there a way around this problem? I prefer how D600 functions in this respect.

I don't have a d750, but some models need for you to be in 'release priority' for this to work. So try that. It is menu A1 if you are using af-c mode (which most people use for this technique). Or A2 is the same thing but for af-s focus mode. Setting these to release priority will tell the camera it is ok to fire even though the focus point is no longer in focus.
