Probably Evan Sharboneau's Trick Photography and Special Effects techniques. Very clever if you have the imagination and time to set up like he does.
Some great images though.
I'll get down to it one day.

One takes a photo without the items to get the background and then layers in a photo of the item...then cleans it up using the clone stamp tool and the spot healing tool.
