In camera exposure compensation

Just wondering what you folks set yours too ??

Heres the scenario a black and white bird (chickadee) in full sun

Expose for the blacks or whites or use the EV on cam and either - or +
I need help in this mine are either blown out highlites or the black are grey

I would under-expose a little as you can recover the details in the shadow but not in the highlights if over exposed.
