So tonight I wanna try something new, I'm gonna go to the edge of the mountain I live on and take pictures of the landscape of the downtown area below. But I need some advice on how best to do this.

I have at my disposal:
-Nikon D3100
-18-55mm Kit Lens
-50mm f/1.8G AF-S NIKKOR Lens
-Tripod
-SB-700 Speedlight

What have you guys got?

Always at 18mm, on the tripod, minimum iso.
Use f/8 to f/11..shutter speed won't matter..
Set in portrait mode, shoot to get panoramas as well

I agree with WhiteLight. Using Aperture Priority, you can get a baseline shutter at F/8 or F/11. If the shutter speed is too dark (or too light), go to manual mode at that same aperture and bump the speed up or down to compensate.

By portrait mode, I assume you just mean put it vertically on the tripod and the second part is to put it back horizontally?

Well, I guess i'll have to wait to use this advice. It started raining hard when I was about to head out. -_-
