Ive been struggling to reset my Diopter recently Ive made it so the info/settings etc are crystal but im struggling to get a crisp image through the viewfinder, any ideas?

I think my eyesight is OK but wondering if i need an eye test and one of the view finder ad-dons that can be bought, it doesn't help that the adjuster is so fiddly to use while trying to stay looking through the viewfinder and not move.

If the display is crisp, the view should be crisp too at the focus point. The whole scene might not be crisp. Since your lens is wide open at rest, depth of field will be minimal although depending on settings, the actual shot could be at a higher aperture and have greater depth of field. So when comparing focus of display info vs scene, compare only to the point you are focused on. Maybe find a sign to focus on, its easier for me to judge focus on something that has words printed on it.

You can also use the camera's focus confirm led in the bottom left corner of the viewfinder.

Use a single point focus, put the object you want to focus on it and focus until you see the light come up, then recompose. It does the trick for me most of the time.

Are you using your YONGNUO 50mm F1.8 lens to try and set your diopter? If so, as you noticed in your sample photos for this lens, the depth of field at F1.8 is very shallow and you viewfinder is displaying the image wide open at F1.8. You might try another slower lens to set your diopter, say something around F4.0. I don't know what other lenses you have since you have not completed your user profile. Also, if you have your diopter set so the info/settings etc are sharp you really should be good to go. I have never seen an issue where the info is sharp and the image in the viewfinder is NOT sharp.

i noticed it on my tamron 18-270 first , and I've tried the kit 18-55 still the same it's not terrible just not crisp as I'd expect but I'm not confident in my own eye tbh, and or maybe I need to clean the focus lens..
its nit essentially blurry but maybe mor of a fogged misty look

I'm in my late 50's and I get very annoyed at my aging eyes. I need distance glasses, sometimes I need reading glasses and sometimes I wear contact lenses and carry stronger reading glasses to use with the contacts. My camera diopter is NEVER right because I never know what I'll be wearing on my eyes. So if I have to manually focus, I give it the best of the blur and check the focus dot like Marcel said.

Solved

finally sussed the problem, a while ago because of the random rubbish in the viewfinder itself I too the focus lens out to clean and the secure wire fell out it turns out I'd put that back in upside down so the focus lens was a little loose and not seated right which was causing the issue.

thanks for all the help..
