Exposure issues in shutter priority

I use my D5100 frequently for motorsports photography. I'm usually shooting shutter priority at somewhere around 1/160 to enable me to pan and have a sharp vehicle with a blurred background for a better sense of speed. I've had great results over the past couple of years but recently I've been experiencing problems with the auto exposure being rather random with shots varying widely from underexposed to overexposed when it formerly was quite consistently on the money. I'd appreciate any thoughts as to what might be causing the exposure to widely vary, even in photos shot in a quick sequence.

I suspect that you might have changed your metering mode to "Spot". It would cause exactly what you are describing, unless you would have turned on the "bracketing".

Underexposure may be due to the fact that you have reached the end of aperture range - it cannot open up more.

Overexposure as others have noted is due to spot metering. If you want consistent exposure use matrix mode, or if the subject is large enough centre weighed.
