Simple.

Turn on the camera and activate the MENU button.
> go to SHOOTING MENU.
> go to SET PICTURE CONTROL.
> go to MONOCHROME.
> enter and then close out the Menu.

Just as an alternative, I shoot all my digital in color, convert the raw file to TIFF or PSD and in photoshop convert to black and white and adjust the color as needed. I find I have more control over the black and white image this way. Plus you got the added bonus of having the original in color anyway.

I agree with Snap Happy. If you are shooting in RAW you will not be able to get a B&W picture out of the camera unless you are using a Nikon RAW converter program. (You don't say what PP you are using.) To get a B&W shot from the camera into post processing if you are not using a Nikon program then you have to shoot it in Jpeg. Then the B&W is imbedded in the Jpeg and you have a B&W picture that you can down load into any PP program. The problem is once you shoot it in a Jpeg format and download it then you will not be able to recover the color, it's permanent.
